Ingredients
  

  • 2 med zucchini, cut into ¼" slices
  • ¾ cup hemp flour
  • ¼ cup hemp hearts
  • ¾ cup gluten free panko breadcrumbs
  • ¾ cup fresh grated parmesan cheese
  • ¼ cup Everything Bagel Seasoning, salt-free
  • OPTIONAL ½ tsp paprika
  • ½ tsp Real Salt
  • OPTIONAL garnish with parsley flakes
  • 2 lg eggs, whisked

Equipment

  • air fryer
  • cutting board & knife
  • baking tray or shallow dish
  • bowl to whisk eggs

Method
 

  1. preheat air-fryer to 390℉ to 400℉

  2. on a baking tray or shallow dish:
    Combine for breadcrumb mixture: hemp flour, hemp hearts, gf panko breadcrumbs, parmeson cheese, everything bagel seasoning and (optional) paprika
  3. In separate bowl, whisk eggs
  4. In batches: coat each zucchini slice with the egg mixture
  5. Transfer the coated zucchini slice to the breadcrumb mixture. Pressing to make a nice crust on each side.
  6. Place prepared zucchini slices on air fryer basket - leaving room for air to circulate so the zucchini will crisp up. Do not crowd the basket - do this is batches if your basket is small or air-fryer only allows only 1 layer at a time.
  7. Bake for 8 minutes
  8. Promptly remove zucchini chips and place on a cooling rack. Sprinkle with salt while hot. (optional) parsley flakes
    Repeat this process with remaining zucchini slices.
  9. Serve with your favorite dipping sauce

    Mix together: ½ teaspoon each of onion powder, garlic powder and poppy seeds with 2 teaspoons of sesame seeds.

Making this Chocolate Hemp Protein Zucchini Cake Gluten Free is a sinch! My preferred gluten free baking flour blend is the Better Batter Gluten Free All Baking Blend. You can substitute the Hemp Protein Powder with Hemp Flour. The zucchini will bring moist texture as well as yummy flavor and nutrition to this cake.

Ingredients
  

For Making the Cake
  • 3/4 Cup Gluten Free Flour Blend Better Batter Gluten Free All Baking Mix (you can substitute unbleached flour if GF

  • 2 3/4 Cup Shredded Zucchini (about 2 large or 3 medium) drained of any liquid
  • 6 TBSP Vegetable Oil (100 ml)
  • 1 Tsp Pure Vanilla Extract
  • 3 Eggs, beaten best at room temperature
  • 9 TBSP Buttermilk, Cultured Whole (150 ml)
  • 4 oz Dark Chocolate Chips
For Fudge Frosting
  • 2/3 Cup Evaporated Milk (5 ⅓ fluid ounces)
  • 1 Cup Organic Cane Sugar
  • 4 oz Bittersweet Chocolate, melted
  • 4 TBSP Unsalted Butter

Equipment

  • 1 large mixing bowl (mixer not required)
  • Whisk
  • 1 9 X 9 Cake Pan
  • 1 Blender - (for making the frosting)
  • SM Sauce pan for melting the chocolate and butter for the frosting or double boiler can be used

Method
 

To Make the Cake
  1. Preheat oven to 350℉. Grease & line a 9-inch square baking pan; set aside.
  2. In a large mixing bowl, whisk together the flour, hemp protein powder (or hemp flour), cocoa powder, salt, baking powder, and sugar. Add the brown sugar and mix well to break up any clumps.
  3. Stir in the shredded zucchini until it's evenly coated in the dry mix.

  4. Make a well in the center of the mixture. Add the oil, vanilla, beaten eggs, and buttermilk. Mix until fully combined (the batter will be thick but soft).
  5. Fold in chocolate chips

  6. Pour the batter in the cake pan. Spreading the batter evenly with a spatula.

  7. Bake for about 30 minutes. Until the center springs back when gently pressed and a tooth pick inserted in the middle comes out with only a few moist crumbs.
  8. Let cool in pan for at least 20 minutes before frosting

Fudge Frosting
  1. In a blender, combine evaporated milk and sugar. Blend at least 1 minute until the sugar is dissolved.
  2. In small sauce pan, (or double boiler); melt chocolate and butter.
    *Note: a microwave can be used to melt the chocolate and butter together.
  3. Add the melted chocolate and butter to the blender with the other ingredients. Blend again for about about 1 minute, or until thickened to a pudding-like consistency.
  4. Pour over cooled cake.
    Once cake has completely cooled, store in a sealed airtight container at room temperature until ready to serve.
