Ingredients
  

  • 2 cup toasted hemp seeds
  • 1 cup unsweetened organic shredded coconut flakes
  • 2 cups chopped dried cherries
  • 1 cup organic cane sugar
  • ½ cup coconut oil (non-hydrogenated coconut oil, which is firm at room temperature)
  • ½ cup coconut milk (unsweetened) This is a dairy alternative milk
  • ½ cup special dark unsweetened cocoa powder or cacao
  • 2 tsp pure vanilla extract

Equipment

  • 9 to12 qt sauce pan Grab a nice big saucepan—something roomy enough so you’ll have plenty of space to stir once the rich chocolate sauce meets the crunchy dry mix.

  • 1 spatula - high-heat tolerant silicone spatula is best—for making the chocolate sauce. Plus it scrapes the sides clean and makes mixing a breeze.
  • wax paper
  • 1 tablespoon for scooping out the mixture and dropping onto the wax paper
  • butter style knife - aids in getting the mixture out of the tablespoon

Method
 

  1. Assemble your ingredients. There is a difference in coconuts oils and coconut milks. This photo is being provided since a picture says 1000 words.
    You want coconut oil that is firm at room temperature, meaning it's non-hydrogenated. It reacts like butter and melts when heated. The coconut milk is a dairy alternative - not the milk that is from the inside of a coconut.
    *(You can substitute butter for the coconut oil and whole dairy milk for the coconut milk.)

  2. Place about a 3 foot piece of wax paper on a counter top or tabletop surface. You will be dropping the prepared clusters on the wax paper. You'll want this ready so you can work with the completed mixture while it's warm, before the mixture begins to firm-up.

The dry ingredients: In a 5 quart mixing bowl
  1. Put hemp seeds and shredded coconut flakes in mixing bowl
  2. Chop dried cherries into smaller pieces

  3. Add chopped cherries to the hemp seeds and coconut. Stir until the ingredients are well blended.
    Set aside

Making the Chocolate Sauce
  1. In a 9 to 12 quart sauce pan:
  2. Add: sugar, coconut oil (or butter), coconut milk (or whole dairy milk), and unsweetened cocoa powder.

  3. Place pan over medium low heat. Stir consistently as the coconut oil melts and the milk heats up. The sugar will begin to blend in. As the chocolate sauce comes to a low boil, reduce heat, stirring constantly with a heat resistant spatula for about 8 to 10 minutes. Stir until the chocolate and sugar is fully dissolved and silky smooth. Watch to keep the sugar from scorching the pan while the sugar absorbs and the mixture thickens slightly.
    Stir in vanilla until well blended.

  4. Remove from heat. Add the dry ingredients of the hemp seeds, shredded coconut flakes and chopped cherries to the chocolate sauce.
    Keep stirring with the spatula.

  5. Until the dry mix is evenly coated with the chocolate sauce
  6. Using a tablespoon and a knife - drop the clusters onto the wax paper. You'll need to work quickly while the mixture is still warm.

  7. Continue dropping clusters by the tablespoon until gone. Let cool

  8. Place clusters into an airtight sealed container. Place in the refrigerator.
    Makes about 60 tablespoon size clusters.
    To make smaller bite-size clusters, use a smaller spoon.
  9. Enjoy!
  10. Stores in the refrigerator for several months -the flavors enhance with age.

Notes

* As noted: Flexible, you can substitute the coconut oil and coconut milk for dairy ingredients by using butter and whole fat grass-fed organic milk.
