Coconut Topping Spread Evenly on Hemp Oatmeal Cake
This hemp oatmeal cake is incredibly moist, with a subtle hint of spice and a golden topping of toasted coconut. It’s a beloved favorite in our family—and for good reason. As a kid, it was my all-time favorite treat. The original recipe came from one of my mother’s dear friends back in the early 1960s. I’ve given it a small makeover by reducing the sugar and adding hemp flour and hemp hearts, which added a wonderful nutty flavor.
How to make this hemp oatmeal cake gluten free
Hemp flour is naturally gluten free. Making this hemp oatmeal cake gluten free is a breeze — and no one will know the difference. Just substitute the unbleached flour that is called for in this recipe and use a gluten free baking flour blend and gluten free rolled oats.
About Fiber and Sugar – Can Fiber Reduce Blood Sugar Spikes?
My mom was a fan of using oatmeal in baked goods, claimed we needed the fiber in our sweet treats. Ma was ahead of her time when it came to being focused on good nutrition. I appreciate her wisdom today and am grateful she taught me a few things about healthy eating habits, which at the time, I just took it as being part of cooking & baking.
