Keto Hemp Seed Energy Bars with Cacao Nibs

Store bought protein bars that meet keto diet plans can taste like cardboard. Not these! The crunchy nutty flavor is sure to please. These are an excellent source of clean, complete plant-based protein, healthy fats and dietary fiber. You'll know every ingredient. Nutrient dense.
Plus an optional flavor profile to suite you're taste buds!
Add warm-tasting spices like cinnamon, nutmeg, ginger or cloves to this recipe. Maybe you want the chocolate chips with those flavors; or maybe not.
Monk fruit is being used as the sweetener. You can tailor the amount of sweet you want. Have fun experimenting with the flavors!

Ingredients
  

  • 2 cups ground whole hemp seeds
  • 1/2 cup hemp flour
  • 1 cup almond flour
  • 1/4 cup hemp hearts
  • ½ cup cacao nibs or unsweetened mini chocolate chips
  • ¼ to ¾ cup monk fruit SEE NOTES: Add the amount of sweetener based on your taste desire
  • 1/2 tsp real salt
  • 2 Lg eggs
  • 1 tbsp Coconut oil
  • 1/2 tsp (OPTIONAL) your preference; add all or none: cinnamon, ground cloves, ground ginger, ground nutmeg. (add a warm spicy profile flavored to your taste)

Equipment

  • Mixer or food processor with 5 to 6 qt bowl

  • Pizza Cutter
  • Rolling Pin
  • Cookie Sheet

Method
 

  1. Preheat oven to 325
  2. Line cookie sheets with parchment paper
  3. In a blender: Grind up the whole hemp seeds, enough to make 2 cups. Pulse mode works best. About 30-seconds until the seeds are ground into a meal like consistency.

  4. Add ground hemp seeds in a 5 to 6 qt mixing bowl. (A Kitchen Aid mixer with a paddle beater works well) A food processor with proper settings can be used.

  5. Add: hemp flour, almond flour, hemp hearts, cacao nibs, salt, (optional: baking spices per your taste)
  6. Mix ingredients until well blended

  7. Add: eggs & coconut oil.
  8. Mix until the consistency allows you to form a ball with the batter.
  9. Firmly ball up the mixture

  10. Place the ball onto the parchment paper and cover with another sheet of parchment paper.
  11. Roll out the ball of dough to ¾" to 1" thick. If cracks, just press it back together with your hands.

  12. Take the pizza cutter and cut into 2 x 4 pieces, or desired size.
  13. Bake for about 35 minutes or until golden brown. (you can bake at a lower temperature for a longer period of time) Adjust the time based on the bar's thickness.
  14. ENJOY!
  15. Store in a airtight container

Notes

It's been my experience as you reduce sugar-sweet foods from your diet, your palate becomes more sensitive to the taste of sugar and you don't desire as much sweetness. Make it your way and adjust the level of sweet that tastes good to you and your family.
