What’s summer without watermelon? As a kid, it was always a fun summer gathering with cousins and neighborhood kids hanging at the picnic table eating watermelon and engaging in a seed spitting contest. Today, most watermelon is seedless and their availability is not limited to July. Eating a slice to the rind while juice drips down your chin is still a favorite. I’ve put together some additional great eating ideas for enjoying watermelon. It doesn’t take much to put watermelon and hemp together for a healthy refreshing SuperSnack. Recipe for Watermelon Juice with Hemp Hearts

- Wash the watermelon to begin preparing
- Cut the Watermelon in Half
- Cut the half section again so it's now quartered
- From the quartered section, slice 1" to 2" sections
- Take the paring knife and cut the rind away from the fleshy red center
- Cut the red center into cubes of desired size (i.e. bite size or larger)
- Place enough cut cubes in the blender to make about 1 to 2 cups of juice and blend until smooth. Repeat until you have the desired amount of juice you want.
- Add a few tablespoons of Hemp Hearts for every couple cups of watermelon juice you've made and blend until smooth
- Pour into glass and enjoy. Store in refrigerator.

Recipe For Watermelon Hemp Heart Popsicles - A Superfood Popsicle

- To make watermelon juice, place cut pieces of watermelon in blender; this may have to be done in stages depending on your type of blender. For the blender I use, I can only add a small amount of cut watermelon pieces and blend up.
- For every 2 to 3 cups of watermelon juice, add 2 to 3 tablespoons of hemp hearts and blend until smooth
- Pour mixture in popsicle containers and freeze. This blend can also be made into ice cubes for adding to chill drinks. Brings nice flavor and nutrition.

Here’s a simple summer salad that’s great for picnic gatherings or just eating at home to compliment whatever your preparing on the grill for dinner.

Watermelon Arugula Hemp Heart - Summer Salad

- Place contents of the box of Arugula in a large glass bowl that has a lid for storing
- Prepare watermelon by cutting into bite size pieces, set aside
- Slice cucumber about 1/4' to 1/2", then cut into quarters, add to bowl with Arugula
- Remove outer skin form the purple onion. Slice onion into thin salad serving size pieces, add to bowl
- Tear mint leafs off the sprig stem. Tear into small pieces and add to the bowl. Mix contents in the bowl until evenly distributed.
- Add crumble Feta Cheese to bowl, stir in gently
- Add drained, pitted Kalamata olives to taste, stir in gently
- Add cut watermelon to bowl and stir gently until evenly distributed
- Add hemp hearts and gently stir until evenly distributed
- In a jar with a lid, add the 3 ingredients together. Shake well.Drizzle over the salad mixture to taste - place in the refrigerator to chill and marinate for a bit
