If you’re hesitant about adding & blending carrots in a smoothie, you’re not alone! Carrots add natural mild sweetness, boost fiber and provide vitamins A and C. We'll give you a few tips on how to get the best texture and flavor. In addition to the carrots, this smoothie features pineapple, bananas, ginger and lemon juice. This recipe is diabetic friendly. It has mild sweet & spicy flavors.

Ingredients
  

  • 1 cup Pealed, cut, blanched carrots: Lightly blanching the carrots in boiling water for a couple of minutes before blending will softens them and makes them easier to blend. Blanching is optional. *You can blanch more carrots than you need in this single smoothie recipe and store the extra blanched carrots in the refrigerator for future use.
  • 2/3 cup Pineapple juice fresh pineapple chunks or canned no-sugar-added pineapple may be used
  • 1 tbsp Real lemon juice fresh squeezed lemon may be used
  • 1 Banana, peeled
  • 1/2 cup Whole milk or whole milk plain Greek yogurt a non-dairy alternate may be substituted, such as coconut
  • 1/2 to 1 tbsp ginger chunk (based on your taste desires) Thumb nail size chunk or more to taste
  • 3 to 4 tbsp Hemp Hearts from Better Option Foods
  • 2 tbsp Higher Fiber Hemp Protein Powder from Better Option Foods
  • 1/8 tsp turmeric - optional

Equipment

  • High Speed Blender
  • 1 to 2 Qt Sauce Pan Needed for blanching carrots

Method
 

  1. Prepare Carrots: Peal and chop into 1 -2 inch long pieces. *Blanching the carrots is optional. Some high speed blenders will chop the carrots up into a smooth texture.

  2. Blanching Carrots:
    Add water to 1 1/2 to 2 quart sauce pan. Place on high heat burner.
    When water comes to a boil, add prepared carrots.
    To blanch carrots, let them boil in the water for 2-5 minutes, depending on the size.
    Drain carrots from water; a colander can be used or simply place the lid of the pot over the pan and drain water in sink. Let cool.
    *Hint: Prepare carrots ahead of time and store in the refrigerator so they are cold when your ready to use. Preparing more than you need in a single serving smoothie will be a time saver for your next smoothie.
  3. Add prepared carrots to blender.

  4. Prepare fresh ginger by scraping off paper-like outer skin from the ginger root
    Place in blender

    Lemon juice
    Peeled banana
